HISTORY...

Established in March of 2000, Chicago Brewing Company is one of 16 properties owned and operated by Magoo's Gaming Group/TLC Enterprises.

THE BREWERS...

Brewmaster: Dave Pascual - discovered his love for brewing while attending a beer class at UNLV where he was studying biology and chemistry. After graduation he accepted an internship offer at another local Nevada brewery, Barley's. In 2005 he moved over to work as assistant brewer at Chicago with former head brewer Kyle Cormier, and then in 2008 became the Brewmaster. Now, besides managing all aspects of the brewery operation, he creates a variety of award winning specialty beers and works with the kitchen staff to design beer-infused menu items.


ATMOSPHERE...

As you enter through the double doors, the large copper brew kettles stand behind 25' tall, floor to ceiling glass wall panels. The brewery area is central to the layout, separating the restaurant and main bar area. Red brick walls cut with two story height stained glass accent windows give the restaurant space a colorful glow. Large glass bowl lighting units and ceiling fans hang from the exposed ceiling system. The semi-open kitchen delivers great food to the raised booths that line the outer wall. A variety of other tables fill the room. A large patio features misters in the summer and heaters in the winter, several big screen monitors and tall tables with umbrellas create a relaxing, outdoor dining environment.

Back behind the brewery are the bar areas. On the main level there's a large wooden bar with custom panels and brass rails that snakes around the room. Video gaming machines are at many of the seats and stand alone machines are on the side wall. Glass racks hang from the exposed wooden beams and metal truss system and more than a dozen tap handles are placed strategically with the full liquor bar display. Large video monitors feature sports and news. Black & white photographs of old Chicago hang on the well lit brick walls. Tall round tables are grouped near the industrial stairway leading to the cigar bar above.

A massive sepia toned panoramic photo of Chicago wraps the top of the wall opposite the bar and couches upstairs. A custom wood and glass panel railing keeps the brewery spaces in plain site. With well lit copper kettles, patrons can watch the brew making activities during the day, sports on the video monitors, and small jazz bands a few nights a week. Low comfortable chairs and tables fill the lounge space for cigar  lovers. A humidor cabinet sits next to the balcony door which has a small area outside for fresh air. The 6 tap, custom wooden bar is well stocked with wine and liquor, and also divides the space to create a back room with video games and more comfortable lounge seating.


BEERS ON TAP...

All Nighter: CBC's premium light ale. We use only the finest two-row pale and imported munich barley's. The All Nighter is lightly hopped and easy to drink. extended cold storage creates a crisp, clean light beer. (ABV 4.6%)

Black Star: CBC's version of an Irish-style dry stout. Our nitrogen injected stout has a rich roasted malt flavor and is dark in color. Black Star is lightly hopped so that it coincides with the gentle bitterness created by the roasted barley. The finish is smooth, silky and creamy. (ABV 4.5%)

Hardway I.P.A.: Our IPA is an American-style India Pale Ale.  It is an unfiltered beer hopped with US Centennial, Summit, Goldings and Columbus varieties.

Old Town Brown: CBC's medal winning old town brown is a German-style brown ale. This beer has a clean well rounded dark malt character which creates a mild chocolate aroma and flavor. Colder fermentation temperatures and long cellaring time makes our brown a truly smooth all around brew. (ABV 4.6%)

Ramblin' Reck Amber Ale: CBC's North American amber ale. A blend of five domestic and imported barley types are used to create its light ruby color. Grown in Yakima Valley, Washington, Mt. Hood and cascade hops are used to lend an earthy, pine-like finish. (ABV 4.5%)

Weizenheimer Wheat: CBC's Bavarian style hefeweizen. Our hefeweizen is made with a blend of German malted wheat and munich two-row barley. This beer is served unfiltered so that the brewery yeast remains in solution. Hefeweizens are highly carbonated in which to bring out the abundance of fruit filled aromas. (ABV 4.6%)

Blueberry Vanilla Wheat: CBC's Blueberry Vanilla Wheat is a tasty change to the traditional Weiss beers of Germany. Some argue that fruit doesn't belong in beer; others believe that the two go hand in hand. The spicy blueberry and delicate vanilla flavor make for a truly refreshing alternative to the typical beer profile. An excellent substitute for breakfast, lunch, dinner, maybe even, a midnight snack.
